As creamy as a classic but lighter mayonnaise, satisfied and adapted to vegans, this vegetable alternative seduces gourmet as much as healthy cooking lovers. A nutritionist explains why it is worth the detour.

It has the appearance, texture and taste of a classic mayonnaise and yet … it is only prepared with legumes. Here is the vegetable mayonnaise that will make you forget that based on eggs.

Mayonnaise, an emblematic sauce

Mayonnaise is one of the emblematic sauces of French cuisine. Traditionally, it is prepared with a lot of oil and an egg yolk, which makes it a very rich condiment: around 750 kcal and 80 g of lipids per 100 g.

“”In other words, it is a very dense preparation in energy, pleasant to taste but not very interesting nutritionally“, Note Vanessa Bedjaï-Haddad.

The recipe revisited by François-Régis Gaudry, inspired by the work of Gilles Daveau, offers an original alternative using white beans as a base.

“The result is bluffing visually and tastefully: we find the creamy texture, the color and even a flavor close to mayonnaise, but with a very different nutritional profile”, underlines the dietician.

This version contains elsewhere “Three times less fat, almost 3 times more protein and an nonexistent fiber intake in the traditional recipe. It uses interesting oils as rapeseed (omega-3) and olive (omega-9), instead of sunflower oil often dominant in conventional mayonnais”, continues the expert.

The assets of this revisited mayonnaise

In summary, the health assets of this vegetable mayonnaise are numerous and varied:

  • It is lighter and less caloric and is therefore more suitable for regular use;
  • It is more satisfying thanks to the proteins and fibers of legumes;
  • It uses better quality fats (rapeseed and olive), more in line with nutritional recommendations;
  • It is suitable for vegetarian/vegan or allergic to the egg;
  • It is safer on the health level (no raw eggs).

Mayonnaise which however has some limits

If this version combines qualities, it is not perfect, however! The taste, of course, remains slightly different: a subtle note of legumes can be noticeable.

“As there are fewer fats, the sauce also keeps a little shorter in the refrigerator than a classic house mayonnaise”, specifies Vanessa Bedjaï-Haddad.

Nevertheless, this version with white beans remains a beautiful alternative to classic mayonnaise.

“More balanced, more satisfying and much less calorie, it remains just as greedy. Of course, it does not completely replace traditional mayonnaise for purists, but it constitutes an excellent option of everyday life, both healthy, vegetable and inventive”, concludes the nutritionist.
