If you’re still torn between well-cooked scrambled eggs and a fried egg with a runny yolk for breakfast, a new culinary trend might just solve your dilemma. On social networks, a hybrid preparation called “frambled eggs” is getting a lot of attention. A dietician deciphers this phenomenon for True Medical.

Frambled eggs“: what is this new viral recipe?

The principle of “frambled eggs“? Bring together in a single preparation the softness of scrambled eggs and the pleasure of a still runny yolk.

To make them at home, nothing very complicated: just crack several eggs in a hot pan with a little butter or oil. Then, we deliberately break one of the yolks to mix it with the whites, then we scramble this mixture using a spatula. At the same time, we leave at least one yolk intact in the pan.

Result ? The whites and broken yolk take on the texture of scrambled eggs, while the last yolk remains whole and runny, perfect for dipping a piece of bread. The whole can then be accompanied by
toasted bread or other accompaniments (avocado, ham, etc.).

And if this recipe may seem banal at first glance, the video at the origin of this phenomenon has accumulated more than 1.3 million views.

The inventor of these eggs in two textures – known under the pseudonym @bussyrelate – seems to be the first surprise. “Did I just invent something?” she asks herself, not without humor.

What does our dietitian think of this recipe?

For Vanessa Bedjaï-Haddad, there is nothing very revolutionary in this recipe: “frambled eggs” are simply a mixture between scrambled eggs and a fried egg. “It is above all a cooking technique which plays on textures, which explains its success on social networks.she confides.

Nutritionally, once again, said recipe does not change the situation.

“Certainly, the egg remains a very interesting food here: it provides very good quality proteins, as well as several important micronutrients such as group B vitamins, vitamin D or choline. But the difference comes mainly from the way in which we cook them and what we add to the cooking. If we add a lot of butter or cheese, the caloric intake increases. This being said, whether the eggs are scrambled, fried or “frambled”, their nutritional qualities remain generally the same”,
specifies the nutritionist.

For the expert, it is above all a culinary trend. “But if it makes you want to cook eggs — a simple, filling and very nutritionally interesting food — that’s already a good thing!”
she concludes.
