How to prepare potato-zucchini röstis for babies

To make this recipe, you must plan:

  • An egg;
  • A zucchini weighing around 250 grams;

  • Two potatoes of around 150 grams;
  • Four tablespoons of flour;
  • A few aromatic herbs according to taste.

Start by washing and peeling the vegetables before grating them finely. Then lightly squeeze the zucchini and potatoes to remove some of their water. This step helps to obtain röstis that hold up well when cooked.

In a salad bowl, beat the egg then add the grated vegetables, aromatic herbs and flour. Mix until you obtain a homogeneous paste.

Solene Collin’s advice for successful cooking

Heat a pan over medium heat then drop spoonfuls of mixture to form the röstis. Let them cook for four to five minutes on each side until they are nicely browned.
