What are the health risks?

The reported microbiological non-compliance corresponds to a risk of presence of
Listeria monocytogenes
bacteria responsible for

listeriosis. This infection can cause fever, headache and body aches, sometimes mistaken for a simple flu-like illness. Since the incubation period can be up to eight weeks, symptoms may occur long after consumption.
