What are the health risks?
The bacteria Listeria monocytogenes can cause listeriosisa potentially serious infection. It develops even at low temperatures (refrigeration), making contamination in refrigerated products of particular concern.
In a consumer, symptoms may include fever, headache and body achessometimes digestive problems. Severe forms can affect the nervous system, cause meningitis, or even serious complications in pregnant women (abortions, neonatal infections). The incubation period can reach eight weekswhich often complicates the link between consumption and symptoms.
