Between coffee beans, ground coffee and capsules, the length of time the flavors remain intact varies from a few days to more than a year. Oxidation begins upon roasting and accelerates when the package is opened.
Many people still confuse flavor preservation and food safety. For the longest storage, sealed capsules keep their aromas best, with a stability of 12 to 18 months, sometimes up to 24 months, as long as they remain intact.
For its part, properly stored coffee beans can be kept for about a year in an airtight container. And after opening a package really remains optimal for 2 to 4 weeks for beans, compared to 1 to 2 weeks for ground coffee.
Shelf life depending on the format: grains, ground or capsules
Before opening, a package of coffee beans can withstand several months of storage, often up to a year, while ground coffee ages more quickly. After opening, the aromas remain at their best level for around 2 to 4 weeks for beans and 1 to 2 weeks for ground coffee, even if the coffee remains drinkable beyond that.
Nespresso-type capsules last much longer thanks to their protective atmosphere. Their freshness is preserved for 12 to 18 months, some ranges going up to 24 months. This duration corresponds to a DDM, not a health deadline: coffee that has passed a few months remains drinkable, it especially loses intensity and can appear flat or rancid to the nose.
Why do coffee flavors disappear so quickly?
Coffee Spirit reminds us that the main enemy of coffee is oxygen which, by oxidizing the volatile aromas, causes the taste to age cup after cup. Humidity, heat and light further aggravate the phenomenon. Ground coffee, where every particle is exposed to air, degrades much faster than whole bean coffee, where the inside of the bean remains protected until it has been ground.
To limit oxidation, you must keep the coffee, ground or in beans, in an opaque airtight container, cool and dry, away from temperature variations. The refrigerator is not recommended because it is too humid and loaded with odors which stick to the grinds.
Which coffee format should you choose to combine taste and preservation?
For those who prioritize taste, freshly ground coffee beans remain the best option. It offers the greatest aromatic richness for 2 to 4 weeks after opening, if only the necessary quantity is ground.
Ground coffee remains practical on a daily basis, while capsules provide a constant cup for people who consume little coffee but spread it out over several months. So take care of your coffee breaks by adapting your purchase to your actual consumption!
