What’s better than a steaming homemade cake for this? Created by Laurent Mariotte, this recipe combines the fondant of the pear with the typical sweetness of chestnut flour.
Embellished with a touch of citrus and a topping of hot chocolate, this dessert has everything to become the new must-have for fall afternoons.
And the cherry on the cake: it only takes 15 minutes to prepare!

The originality of this dessert lies in its combination of delicious and authentic ingredients. Chestnut flour provides a delicate and slightly woody flavor. Which undoubtedly evokes autumn and walks in the forest.
Combined with pears – a seasonal fruit rich in water and fiber – it offers a texture that is both dense and soft.
To awaken the aromatic palette, a few orange zests and a hint of rum bring a note of freshness and a very pleasant fragrance. Finally, the melted dark chocolate topping adds a warm, delicious and comforting touch.
Simple steps to make your pear-chestnut cake a success
In just a few steps, your kitchen will be filled with a delicious aroma:
- In a salad bowl, whisk 3 eggs with 80 g of cane sugar and 1 sachet of vanilla sugar until you obtain a very foamy mixture;
- Pour in 100 g of melted butter, then add 100 g of chestnut flour sifted with 1 sachet of baking powder;
- Mix until smooth;
- Add 20 cl of whole liquid cream, the zest of an orange and, if you wish, a small cap of rum;
- Pour the mixture into a 20 cm round mold (buttered and floured);
- Harmoniously arrange in a rosette 4 to 5 fresh seasonal pears cut into thin slices (or a large can of well-drained pears in syrup);
- Bake at 180°C for around 30 minutes. The cake should be nicely browned and the blade of a knife should come out dry.
