- The origin of fish: Scotland and Ireland maintain better breeding practices than Norway;
- The amount of fat : the flesh of premium salmon is fatter, which makes the slice of salmon flabbier and more “oily”. This fat is also visible in the flesh of the fish, in the form of white streaks;
- The flavor: the (disappointing) taste of the salmon should alert you. In fact, salmon from low-cost brands often come from industrial farms, where the fish are fed with low-quality food;
- The color of the salmon: the color of the flesh of low-cost salmon may be paler (and less orange) than that of higher quality salmon;
- The red label is a guarantee of quality. It guarantees product traceability and more respectful production methods (slow growth of fish in the open sea, lower density of fish in cages, restricted use of antibiotics, etc.).
