The error to avoid with eggs: what a virologist reveals
The conservation of eggs arouses many received ideas, especially on social networks. A virologist warns of certain practices that may present health risks.

Keep your eggs in the refrigerator, wash them before use … on social networks, preconceived ideas around the conservation and cooking of the eggs are numerous. The latest? Freeze them. Yes, you read that right. In a video broadcast on Instagram, Dr. Océane Sorel, virologist, alerts the dangers that this practice presents.

Freeze its eggs: the new wacky trend seen on networks

On Tiktok and Instagram, Internet users swear by this new tip: freeze its raw eggs with the shell, and then transform them into mini-portions. Indeed, once the whole egg is hardened, it would be possible to decide it in its width – then to cook these washers – in order to make mini eggs on the dish. A practice which makes you smile, but which would actually prove harmful to health.

“”At freezing, the shell can burst … and bacteria like Salmonella, present on the surface, risk contaminating the interior“, alerts Dr. Océane Sorel.”Food poisoning is thus possible, even after cooking, because it is not always sufficient to kill all bacteria“, Warm the expert again.

Conclusion: freezing can indeed accelerate the multiplication of germs. Dr. Océane Sorel therefore recommends adjusting his reflexes so that he no longer endangers his health.

“If you want to freeze your eggs: break them, beat them (white & yellow) and freeze them in a clean container. The white white people also freeze very well. The yellows alone? Much less”, she says.

Our other tips for conservation of eggs

Other good habits must be adopted when putting eggs in the refrigerator:

  • Keep the eggs in their original container in order to minimize the risk of food poisoning (by keeping them in their original container, you will also avoid direct contact with other foods, which reduces the risk of cross contamination);
  • Always choose eggs that are not cracked because the latter keep for a long time and have a risk of contamination. Also check that they do not have excrement on the shell;
  • Place your eggs on the central tablet of the refrigerator and not on the side. This practice ensures their preservation at a constant temperature;
  • The remains of whites and raw egg yolks should be kept in hermetic boxes, placed quickly in the refrigerator.

In this way, you will limit the risks and germs in your kitchen.
