An egg for breakfast is already a good dose of protein. But on its own, it does not cover all needs. To make it a more complete meal, certain foods are particularly interesting to add. Avocado, spinach, tomatoes, oatmeal or even peppers: here’s how to combine them with eggs.
Why choose the right foods to pair with eggs
One egg provides around 6 to 7 g of good quality protein, as well as vitamins A, D, E, K and B12. But it contains little fiber and almost no vitamin C.
The choice of accompaniments is therefore important. Certain foods help supplement the nutritional benefits of the egg, while making the meal more filling.
In an article updated on November 7, 2025, the Indian daily Times of India recommends avocado, spinach, tomatoes, oatmeal and peppers. These foods provide fiber, vitamin C, antioxidants and even unsaturated fats.
The egg yolk itself contains lipids. In particular, they facilitate the absorption of certain compounds present in vegetables, such as carotenoids. This is the case for lutein from spinach or lycopene from tomatoes.
Combining eggs with colorful vegetables can therefore be a simple way to enrich your plate, without necessarily increasing the quantities much.
Avocado, spinach, tomatoes, oats and peppers: what do they bring them?
Avocado is an easy partner for eggs. It mainly contains monounsaturated fatty acids, as well as fiber. Its fats can also promote the absorption of fat-soluble vitamins, such as vitamins A, D, E and K. Half an avocado crushed on toast with a soft-boiled egg is enough to make a simple and satisfying breakfast.
Spinach makes it easy to add vegetables to the plate. They provide folate and minerals in particular. Just brown them for a few minutes in the pan before adding the eggs.
Tomatoes provide lycopene, a carotenoid whose absorption is favored by the presence of fat. They can be eaten raw or lightly cooked, depending on taste.
Oatmeal is good for its high fiber content. Combined with the proteins and lipids in eggs, they contribute to a more filling meal. They can be eaten alongside eggs or integrated into certain savory preparations.
Finally, peppers help complete the plate with vitamin C. Red and yellow peppers are particularly rich in it. They can be added to an omelette, scrambled eggs or simply served on the side.
How to create a more balanced breakfast with eggs?
There is no need to multiply the ingredients here. For a balanced breakfast, you can simply combine a serving of eggs with a colorful vegetable and, when possible, with a source of whole grains like oatmeal.
This also allows you to vary the accompaniments. Instead of systematically relying on cheese or cold meats, vegetables provide volume and fiber, while limiting the addition of saturated fats.
Cooking also deserves a little attention. Gentle cooking helps limit the degradation of certain heat-sensitive nutrients. To save time in the morning, it is also possible to prepare hard-boiled eggs, roasted peppers or cooked spinach in advance.
In a few minutes, it becomes easy to put together a complete plate around eggs, with vegetables, fiber and sources of good lipids.
