Looking for a light aperitif? This tuna rillette recipe will quickly become a classic
Want a gourmet aperitif without weighing down your meal? These light tuna rillettes can be prepared in just a few minutes with simple ingredients and bring a touch of freshness ideal for summer evenings.

Summer aperitifs often rhyme with chips, crackers and rich preparations. However, it is entirely possible to offer a tasty, fresh and low-calorie recipe. These light tuna rillettes, inspired by nutritionist Dr Jean-Michel Cohen, rely on a few everyday ingredients and can be made in just a few minutes.

The essential ingredients for making light tuna rillettes

To prepare a portion, you need:

  • 125 g of natural tuna;
  • 1 plain petit-suisse 0% fat;
  • The juice of half a lemon;
  • 1/2 shallot;
  • 1/2 teaspoon mustard;
  • 1 tablespoon chopped parsley;
  • 1 teaspoon of capers (optional);
  • Salt and pepper.

The balance between the creaminess of the petit-suisse and the acidity of the lemon makes it possible to obtain a light preparation without sacrificing deliciousness.

Express preparation ready in just a few minutes

Start by finely slicing the shallot and chopping the parsley. Drain the tuna carefully before crushing it with a fork. Mix it with the petit-suisse, then add the shallot, lemon juice, mustard and parsley. Add capers if desired, then season with salt and pepper.

This preparation is best enjoyed fresh. It can be served on light toast or, for an even more balanced version, on endive leaves, slices of cucumber, zucchini or black radish.

How to integrate these rillettes into a balanced meal

Dr. Cohen states that “a portion of this recipe can advantageously replace in a menu: 1 meat, fish or eggs + 1/2 dairy“. He also recommends serving these rillettes very cold in order to fully appreciate the flavors.

Easy to prepare, economical and refreshing, these tuna rillettes are a simple idea to vary summer aperitifs while maintaining a balanced diet.
